The Best Chicken Brine Recipe 

Lemons, honey, fresh herbs, and spices make this chicken brine recipe juicy and tender every time! A guaranteed way to cook luscious, tasty roasted, smoked, or fried chicken.  

– 8 cups water – 1/2 cup kosher salt do not use table salt – 1/4 cup honey – 3 dried bay leave – 5 cloves of garlic smashed and peeled – 1 tablespoon whole black peppercorn – 3 sprigs fresh rosemary – 3 sprigs fresh thyme – 3 sprigs fresh parsley – 2 lemons sliced – 4 lb whole chicken


In a big pot, mix the lemons, bay leaves, garlic, peppers, rosemary, thyme, sweet basil, and honey.   


Step 1

Over medium-low heat, bring to a boil. After 3 to 4 minutes, the salt should be gone.  

Step 2

Turn off the heat and let it cool all the way down. Put the chicken in the water that has been cooled down. Soak the chicken all the way to the bottom.  

Step 3

Put the pot in the fridge for 8 to 24 hours with the lid on. Take the chicken out of the salt water and use paper towels to dry it.   

Step 4

Take out any spices or herbs. Cook the chicken by baking, smoking, or frying it.
